Hey all... just a little recipe:
Squash Chicken
1.5 lbs boneless/skinless chicken breast, sliced into bite size pieces
16 C Opo squash or Winter Melon, cubed
2 lbs baby bok choy, cut into bite sized pieces
8 shiitake mushrooms, sliced
3 C reduced sodium/non-fat chicken broth
1/4 C soy sauce (or reduced sodium soy sauce)
2 tbs Oyster Sauce
1 tsp Garlic, minced
2 inch piece of fresh ginger cut in two
Dash of pepper
1 tbs corn starch
I just throw everything into the pot (sans the corn starch) until the squash is tender. Thicken w/ a little corn starch slurry and serve over brown rice. Makes about 8 hearty servings and not including the rice, is about 191 kcals, 17g carbs, 2g fat and 30g protein.

BTW, not good for a low sodium diet. It does add a nice chunk to your daily diet at 864.8mg sodium. Using reduced sodium will save you about 175mg sodium.0
