Hot & Sour Soup

Adapted from clean eating magazine

4 cups low sodium veggie broth
2 carrots, julienned
2 cups sliced snow peas
1 two inch piece of Ginger, chopped
2 tsp low sodium soy sauce
2 TBS rice vinegar
1 tsp red pepper flake
1 tsp cumin
1 tsp curry

12 oz. Package tofu, drained and cubes
4 green onions


-bring broth to boil. Add carrots, snow peas, and Ginger. Return to boil. Cook 3 mins, till tender.

- in a cup, stir sou sauce, vinegar , 1 cup water and spices. Stir into simmering soup. Gently add tofu, stir gently. Turn off heat, let tofu warm thru 2 mins. Serve sprinkled with freeness onion.

2 cup serving: 230 calories, 4 gm fat, sodium 340 mg.

    I've just started looking at it, really. Looks VERY interesting, but don't know that I could always follow. Every now & then I have to have a Smart One for lunch. But looks like a great plan and I LOVE the recipes in the magazine I got!

    Bump!!! Ps Braggs Liquid Aminos taste alot like soy sauce. I use for an alternative all the time.
