    Do you sweeten it all? I have soaked my almonds over night and then blended them in the vitamix with dates but, I have noticed that dates are so high in calories that I am wondering if there is something a little less caloric to do? I do thing it is really yummy however.
  • Well, if you use 2 dates and it makes 4 servings.... really you are only consuming a portion of one date.... AND some has been strained out, unless you aren't straining the milk out???. I do agree tho in that adds more calorie concern....

    I make it plain and is delicious in cereal and granola. But I have also used agave a little Cinnamon, or vanilla extract and a stevia packet. There are a lot of options.

    I read a recipe once on how to make chai almond milk. mmm I want to try it. :-D
  • I tried making almond milk=failure. It was just bitter and not smooth and yummy like store brand. What's your secret?
  • Not bitter at all and super creamy!! First, you have to use raw almonds, soak them in fridge for 4-8hrs. I blends them with a cup of water and slowly add 3 more as they blend. Some vanilla extract if going for sweetened with a packet of stevia or some agave. Blend till smooth Then strain through nut milk bag, doubled up cheesecloth, or a super fine strainer. Bag works best I think. It is even somewhat frothy and tastes like almonds with a hint if vanilla. This time I did fresh ground cinnamon in it too. Very appetizing. :) try again. I prefer it over store bought because it's all natural and fresh with nothing crudy our mystery added to it. I also think it's less watery and tastes more like almonds. Mm
