Hey all.
I have chicken, reduced fat coconut milk, red thai paste and coriander...so the obvious choice is a thai curry. However, I can't find any decent calorie counted recipes- any help would be appreciated!
Thanks,
Jas

I don't know if this is a Thai dish or not, but it does involve chicken and red curry. I made it last week and loved it so much I made it again two days later
It calls for english cucumber, but I had a regular cucumber on hand and just used that... I'm sure you could also sub or add shredded carrots or what ever other veggies you prefer. The recipe is from Cooking Light magazine, which since I started my weight loss journey, has been like a cooking bible to me! I totally recommend it to everyone!

Hey, here is a coconut thai shrimp recipe that's only 146 calories... I'm sure it would turn out just fine of you substitute the shrimp for chicken
