I'm trying to stay within my 1200 calories/day range, but I find it difficult at times and end up having an intake of about 1000 calories/day. What are good calorie densed food choices?

Are you trying to say you need to find foods that have a higher caloric rate per serving?
Avocados, olives, nuts, cheeses are all items that you could snack on that have more calories..lol.
They all have healthier fats (except cheese), the cheese gives you nice protein though.

If you drink milk switch to a higher %MF (i.e. 1% to 2%), eat full fat versions of foods (sour cream, cottage cheese, yogurt, salad dressings) Add olive oil to soups and sauces. Add avocado to salads and sandwiches. Instead of 1 glass of water have a glass of juice. For snacks try nuts, seeds, or dehydrated fruit.

If you are really only getting 1000 calories a day, you are probably not getting the amount of protein, vitamins, etc. you need. I would see what you are low in on a daily basis and find food rich in that nutrient. I am often low in iron, for example, so I find iron-rich foods on the days I am below my calorie limit rather than reach for some empty calories.
