olive oil ok?

I seem to be making alot of my dinners by frying it in a tablespoon or two of olive oil. I always log it on my food tracker and I know it is calorie rich. But as lond as I stay below my calorie limit, is it ok to cook this way? I seem to make blackened fish and chicken mostly.

Absolutely. I did Weight Watchers a few years back and that was the one thing they talk a lot. I, personally, tend to not get enough fat in my diet.
Keep in mind your body needs some fat (ingested) for proper functioning of many organs.
Another alternative is Grape Seed oil. I prefer it because its lighter in flavor, higher heat index.0 -
