Delish Aspargus Side Dish!

So I had to post another one of my "Eat Shrink and Be Merry" cookbook trials. Soo good! It's roasted asparagus with balsamic vinegar and light feta.. Soo good.

"Britney's Spears"

1 1/2 lbs asparagus spears
1 tbsp olive oil
1tsp minced garlic
2tsp balsamic vinegar
salt and pepper
1/4c crumbled light feta cheese (or 1/4c light grated Parmesan)

- Preheat oven to 450F, trim ends off asparagus

-Spray small baking sheet with cooking spray. Arrange spears in a single layer. Drizzle with olive oil and sprinkle with garlic. Mix asparagus around and bit and make sure it is well coated.

-Roasted for 12-15mins, do not overcook them! "Soggy asparagus is no fun and no yum."

-Arrange cooked asparagus on a serving plate. Sprinkle with vinegar, salt and pepper, top with crumbled feta and serve asap!
