Does anyone have any favorite healthy recipes that are easy and fairly quick to make? I've looked at online websites and magazines for healthy cooking but all the recipes are rather difficult for someone who rarely has time to cook. I've been doing alot of the prepackaged healthy choice steamer meals and its gotten me no where with my weight loss goals.

    For those of you on a budget (and really...who isn't?) This soup is a delicious and light dinner or lunch...



    Serves Four!



    1/4 cup of Olive Oil

    1 Onion

    3 Bell Peppers

    1/2 cup of uncooked rice

    1 or 2 cloves of garlic

    1 tsp of oregano

    1 tsp of celery salt

    1/2 tsp of savory

    1/2 tsp of thyme

    3 cups of chicken broth

    2 cups of water

    salt and pepper to taste



    1)Put your oil in a dutch oven on the stove and heat it on medium
    2)dice your onion and the pepper.
    3)Sautee the onion for three to four minutes and then add the bell peppers and sautee for another 5 minutes.
    4)add in the rice and the crushed garlic and seasonings and stir it until it has a nice aroma to it.
    5)Add the broth and the water and bring it to a boil.
    6)Reduce heat and simmer for at least 20 minutes.
    The Longer you leave the soup on the stove, the more flavourful it will be. I like to make it right after lunch and leave it on low until dinner time.

  • I use the Campbell's website. I usually only spend about 20 minutes, sometimes less, putting a meal together. My favorite is Sweet & Spicy Picante Chicken.

    4 skinless, boneless chicken breast halves (about 1 pound)

    1 jar (16 ounces) Pace® Picante Sauce

    3 tablespoons packed light brown sugar

    1 tablespoon Dijon-style mustard

    1 cup regular long-grain white rice, prepared according to package directions (about 3 cups)

    1.Heat the oven to 400°F. Place the chicken into a 2-quart shallow baking dish. Stir the picante sauce, brown sugar and mustard in a small bowl. Pour the picante sauce mixture over the chicken.
    2.Bake for 20 minutes or until the chicken is cooked through. Serve the chicken and sauce with the rice.

    I used 10 minute whole grain brown rice, and cut the recipe down for two people. It was awesome!!!
