Green Chili Chicken Casserole
Well after searching all over Austin for Whole Green Chilis and NOT finding any, I decided to lighten up my Mom's Green Chili Casserole - Edie style :)

12 corn tortillas

1 Rotessori chicken skin removed -shredded and divide in 1/2. (or boil a whole chicken)

4 cans chopped green chilies

8 oz lowfat pepper jack cheese

1/2 jar of salsa

1 can 98% FF Cream of chicken soup

Preheat oven to 350. Lightly grease a casserole dish w/olive oil. Lay 6 corn tortillas in bottom of dish. Add 1/2 of the chicken, 2 cans chopped chilies, 1/2 of hot sauce, sprinkle w/ half of cheese. Layer 6 more corn tortillas, 2 cans green chilies, remaining hot sauce. Mix soup w/ one can of water and pour over casserole. Top with remaining cheese. Bake for 30-40 minutes until heated through and cheese is melted. It was wonderful!!!!
