thai sweet potato soup
I just made a giant pot of this and it is amaaaaaayzing, filling and warming for winter days. its not REALLY thai, but has some of the ingredients.
1 large sweet potato
2 carrots
1/2 red onion
2 garlic cloves
extra virgin coconut oil
1 green pepper
1inch of fresh ginger
bunch of fresh coriander
350ml coconut milk
spices to taste
heat up coconut oil in a large pot
add chopped onion and chopped garlic
add carrots simmer for 5 min
add chopped sweet potato
add ginger
add spices: i used 1 teaspoon sweet paprika, a teaspoon coarse sea salt, pinch of pepper, pinch of cayenne, half a teaspoon of curry powder, half a teaspoon of thyme
cover with water
cook covered on high until vegetables are tender (about 20 min)
add chopped green pepper
reduce heat to simmer and add coconut milk
mix it all up and let it come to a gentle boil
enjoy with fresh coriander and extra chili sauce.

i do not have the nutirional value for this. however.. only the cocomilk is potentially a bit of a calorie trap. even then it is quite dilluted in the soup and fat from cocomilk is quite good for you. For my food diary i just put in the cooked veggies in the soup and then added the estimated cocomilk separately. not ideal, i know
its so good i want to make out with it. I had to hide it in the fridge so that i wouldnt eat the whole thing0 -
