Super Bowl Munchies!!
Hi, everyone!
My fiance and I are hosting his friends for the Super Bowl this weekend, and I've been looking for snack ideas that won't totally blow the diet. I discovered a baked jalapeno popper recipe from Emeril Lagasse and built it into SparkRecipes with fat free milk and cheese to figure out the nutritional information. It's about 51 calories and 1/2 gram of fat per popper, so it could be a lot worse! The sodium is a bit high, but I guess you can't win them all.

I built the low-cal version of the poppers into MFP, too. So if you choose to make them, you can search for Emeril Jalapeno Poppers on MFP and be able to add them to your diary!
Anyone else have low-cal, football-friendly snack ideas/recipes other than a veggie plate (I'm already planning to do one of those, too!)?

Great post! I'm really looking forward to seeing some ideas. We go to an annual party and we need some good ideas that will help me stay on track. Luckily I know someone is bringing fruits and veggies, but honestly it's usually a drink and eat fest... not for me this year.

I use Greek Yogurt in place of sour cream and you would never know the difference. It is thick like sour cream so you can mix in salsa or french onion powder for a low calorie dip that has protein!
I get the larger container for a good price at my Costco but they have small containers at Pavilions / Vons. I don't like low fat or fat free sour cream because it tastes sweet and not real creamy so I use the Greek "plain" Yogurt in any recipe that calls for sour cream or on any dish I would have used sour cream.0 -
well this isn't SUPER low calories but it's not so bad if you don't have a lot of it!!
Chicken wing dip!
1 block of reduced fat cream cheese
1 jar reduced fat blue cheese dressing
1 small jar frank's red-hot sauce (reduced sodium kind)
2 large cans all white mean chunk chicken
Mix the cream cheese and blue cheese together in a large bowl, add sauce and chicken and mix all together until everything is blended well. Put in casserole dish and bake at 350 about 25 minutes or until the edges are boiling. It's delish and always a hit no matter where I take it! Eat it on some pita chips or even celery is yummy with it too!0 -
I have a buff chicken dip that is freaking amazing! I just use one container of greek yogurt, 1 can of chicken, and frank's red hot sauce to taste (usually about 1/2 a cup) then I bake it until it's warm and add some mozzarella cheese on top. The alternative of course is cream cheese and sour cream, but you cant really tell the difference.0

Before I started eating healthy, I made a Buffalo Chicken Dip that everyone loooooved. I made a healthier version for a pot luck we had at work and it was still a hit, and no one could tell it was low fat!
Here's the recipe:
2 10 oz cans of chunk chicken
2 low fat or fat free packages of cream cheese
1 cup of low fat or fat free Ranch dressing
3/4 cup of Frank's Red Hot Sauce
1 1/2 cups low fat or fat free cheddar cheese (I usually don't even add this and you can't tell)
Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.
This can easily serve at least 10 people, and breaks down per serving to: 128 cal, 8 carbs, 1g fat, 19 protein (using fat free ingredients)

Salsa, simple and low cal, use low cal chips like the Kellog's chip crackers, or veggi chips0
