I have been craving lemon cookies after trying the Lemonades Girls Scout cookies. Anyone have any good recipes that don't require you to be a Martha Stewart in the kitchen? I tried one low calorie option a while back but they weren't too great so I am hoping someone has something better.

    why can't you just have a couple of the lemon ones you like and just count the calories?

    2 cookies is 150 calories. You could have 3 without ruining your day...or 4 if you exercised! :-)

    My roomie used to make funfetti cake cookies and they were only like 60 cals a pop... maybe add a little lemonade to the recipe instead of water? Crystal light packets? Lol be creative I'm sure something will taste fab

    I think i would do lemon cake mix cookies made with applesauce instead of oil and use some lemon juice in place of some of the water.

    Lemon Honey Drop Cookies

    Yield: 32 cookies (serving size: 1 cookie)

    Ingredients
    1/2 cup granulated sugar
    7 tablespoons butter or stick margarine, softened
    2 teaspoons grated lemon rind
    1/3 cup honey
    1/2 teaspoon lemon extract
    1 large egg
    1 3/4 cups all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    1/4 cup plain fat-free yogurt
    Cooking spray
    1 cup powdered sugar
    2 tablespoons fresh lemon juice
    2 teaspoons grated lemon rind
    Preparation
    Preheat oven to 350°.

    Beat first 3 ingredients with a mixer at medium speed until light and fluffy. Add honey, extract, and egg; beat until well-blended. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt, stirring well with a whisk. Add flour mixture to sugar mixture alternately with yogurt, beginning and ending with flour mixture. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350° for 12 minutes or until lightly browned.

    Combine powdered sugar and juice in a small bowl; stir with a whisk. Brush powdered sugar mixture evenly over hot cookies. Sprinkle evenly with 2 teaspoons rind. Remove cookies from pan; cool on wire racks.

    Easy Lemon Square

    Whip up this easy lemon square recipe in a matter of minutes for a light dessert that's deliciously sweet and tangy.

    Yield: 16 servings(1 square)

    Ingredients
    Crust:
    1/4 cup granulated sugar
    3 tablespoons butter or stick margarine, softened
    1 cup all-purpose flour
    Topping:
    3 large eggs
    3/4 cup granulated sugar
    2 teaspoons grated lemon rind
    1/3 cup fresh lemon juice
    3 tablespoons all-purpose flour
    1/2 teaspoon baking powder
    1/8 teaspoon salt
    2 teaspoons powdered sugar
    Preparation
    Preheat oven to 350°.

    To prepare the crust, beat 1/4 cup granulated sugar and the butter at medium speed of a mixer until creamy. Lightly spoon 1 cup flour into a dry measuring cup; level with a knife. Gradually add 1 cup flour to sugar mixture, beating at low speed until mixture resembles fine crumbs. Gently press mixture into bottom of an 8-inch square baking pan. Bake at 350° for 15 minutes; cool on a wire rack.

    To prepare topping, beat eggs at medium speed until foamy. Add 3/4 cup granulated sugar and next 5 ingredients (3/4 cup granulated sugar through salt), and beat until well-blended. Pour mixture over partially baked crust. Bake at 350° for 20 to 25 minutes or until set. Cool on wire rack. Sift powdered sugar evenly over top.
