Freezing Stuffed Peppers?

I plan on making these next week. I would like to freeze some b/c I'm the only one in the house who will eat them. I've never made stuffed peppers before, am I supposed to freeze them, then cook later? Cook first, then freeze? Cook partially, then freeze?

    Cook them first, then freeze. You don't want to thaw ground beef or turkey, mix it with other ingredients and then refreeze. They usually freeze beautifully! Freeze them in serving sized portions and you're all set with healthy meals!

    I don't know on the freezing thing, but I do know that I found an awesome recipe on here - search for stuffed zucchini - and made them this summer, but I only had 4 peppers ready in my garden and the batch made way more than that and I had a whole butter tub of leftover stuffing in the fridge. Turns out that those in my family who don't like peppers and would not eat the stuffed pepper itself loved the stuffing part.

    I think the pepper would probably keep better frozen before cooked and be better tasting crisped in the oven not rubbery rewarmed after freezing cooked (especially if you microwave it), but they do release a bit of water when thawed out raw so you might want to put them on a grate to defrost before cooking so the extra liquid could drain out. Of course, then if you make them one at a time later you have to cook them from scratch, so if they are already cooked you can just warm one up at a time.

    (If you use fresh beef or turkey freezing it is not an issue since it was never frozen to start with, but i agree, don't freeze then defrost and refreeze.)

    You can defrost raw meat, cook it, then refreeze. Just shouldn't refreeze it raw. But I'd be getting fresh anyway :)

    I also agree that freezing after cooking would be best.

    Speaking of peppers.....what is the recipe everyone uses for stuffed peppers? I LOVE stuff peppers but would like to try something new......

    Desirai - No problem :) I found that blog on a posting here! I've made the Garlic Lovers Roast and Roasted Acorn Squash so far. Both were quite good!
