Veggie Burger Recipes?

Does anyone out there have a good suggestion for a veggie burger recipe? I particulary love lentils so if it used those, that would be awesome, but I'm really pretty open to any kind of base.

  • 3 cups cooked black lentils
    4 large eggs
    1/2 teaspoon fine-grain sea salt
    1 onion, finely chopped
    1 cup toasted fine (whole-grain) bread crumbs
    1 tablespoon extra-virgin olive oil (or clarified butter)

    Combine the lentils, eggs, and salt in a food processor. Puree until the mixture is the consistency of a runny yet textured hummus - it's o.k. if many of the lentils remain whole (see photo). Pour into a mixing bowl and stir in the onion. Add the breadcrumbs, stir, and let sit for a couple of minutes so the crumbs can absorb some of the moisture. At this point, you should have a very moist mixture that you can easily form into twelve 1 1/2-inch-thick patties. I err on the moist side here, because it makes for a nicely textured burger. You can always add more bread crumbs a bit at a time to firm up the dough if need be. Conversely, a bit of water or more egg can be used to moisten the batter.
    Heat the oil in a heavy skillet over medium low, add 4 patties, cover, and cook for 7 to 10 minutes, until the bottoms begin to brown. Turn up the heat if there is no browning after 10 minutes. Flip the patties and cook the second side for 7 minutes, or until golden. Remove from the skillet and cool on a wire rack while you cook the remaining patties. Carefully cut each patty in half, insert your favorite fillings, and enjoy immediately.
    Makes 12 mini burgers.

    Veggie Burgers
    Mix the following:
    - 1 grated carrot
    - ½ cup collards
    - 1 tbsp. sesame seeds
    - 1 beaten egg
    - ½ tsp. black pepper
    - 1 tsp soy sauce
    - 2 ½ cups of cooked rice or millet
    Thoroughly mix all the ingredients. Shape it into small sized patties. Fry this until it becomes golden brown. Bake at 400 °F on a baking sheet for about 10 minutes per side.

    Lentil and walnut burgers

    2 onions (chopped)
    2 garlic cloves (crushed)
    1 cup red split lentils
    2 cups water
    1/2 tsp rosemary
    1/2 tsp thyme
    1 bayleaf
    3tbsp tomato paste
    1.5 cups walnuts (finely chopped)
    Salt and pepper to season
    Rice flour for coating (can use regular flour)

    Place onions, garlic, lentils, water and herbs into a saucepan and bring to the boil. Simmer, covered, stirring occasionally until the lentils are soft and the mixture starts to become a thick puree. Should take about 40mins.
    Remove the bayleaf. Stir in the tomato paste and walnuts, then season. Allow to cool.
    Sprinkle the flour on a work surface. Divide the lentil mixture into 8 and form into a burger shape, rolling each in the flour.
    Cook either in the oven (200C, 400F or gas 6) for 25mins or in a frying pan coated in 1 cal spray.

    These are really yummy and freeze well.
