I am looking for some easy, healthy, crock pot recipes???

Throw them at me, pleeease! :)

    1 bag boneless skinless chicken breasts
    16 oz mushrooms
    1 can 98% fat free cream of mushroom soup
    16 oz fat free sour cream
    1 packet italian dry salad dressing mix

    Cook on low 6-8 hours. Goes excellent over mashed potatoes.

    Also, there is a great cookbook I use called Fix It and Forget It Lightly. Every recipe in there is low cal.

    winter chicken soup
    -chicken stock 3 cups
    -lemon grass 1 stock
    -thyme 2 strings
    -1 bay leaf
    -dried chili pods (optional)
    -sweet potatoes 1
    -black pepper and salt to taste
    -chicken breast 2
    -celery 1 stock
    -1 cup white wine
    -leek 1 stock
    -2 red or green sweet peppers

    Yes its a large recipe, but I like to cook in large batches. Therefore, I have portion size meals in the freezer when i have really busy week.

    Pulled pork

    Large pork roast
    Add a pitch of garlic
    Half an onion
    Half a green pepper
    Two cups of water

    Cook 6-8 hours

    Take pork out and shred
    Add favorite BBQ sauce or leave as is.

    My boys love this ages 2 and 7! Even the husband enjoys!:love:
    I then do a quick veggie!

    Don't even get me started... LOL. I started out using recipes, and ended up making up my own.

    Chicken (or turkey) Stew

    Boneless, skinless chicken breasts cut in chunks and browned, or leftover turkey meat (great for avoiding "dry turkey leftover syndrome")
    3 cans cream of chicken soup (low sodium/fat if possible)
    carrots
    green beans
    corn
    potatoes
    any other veggies you like (I add mushrooms and leeks as well)
    sage to taste
    thyme to taste
    black pepper to taste
    flour to thicken

    Put in pot, cook on low for 8-10 hours. Add the corn and green beans with about an hour left, or else they get mushy.

    My Spaghetti Sauce Recipe

    3 900 mL cans crushed tomatoes
    1 lb ground beef, browned
    red onion
    jalapenos
    green peppers
    mushrooms
    frozen chopped spinach
    zucchini when it's in season
    italian herb blend

    Throw in crock pot, cook on low 8-10 hours, adding zucchini in the last hour or so if you're using it.

    Oh how I love me some BBQ pulled pork! However, I eat this on sandwich rolls, which makes for an unhealthy dinner. Any other ideas?

    Have you considered eating the pulled pork on a salad or a wrap? It works wonderfully.

    Those alternatives would be great! I could actually get away with no salad dressing since the BBQ flavor is so strong. I am going to try it!
