egg salad pita recipe

OMG yum. I like pickles, I like egg salad, but I never could get accustomed to the texture of having diced pickles or relish added into the actual egg salad. I always would just opt for a pickle on the side. Well, a friend of mine had posted this recipe on Facebook and I knew I had to try it.

Just got done with lunch and have to say, this egg salad hit the spot!!

Ingredients
1 hard-boiled egg, chopped
1 oz. grated cheddar cheese
2 tablespoons reduced calorie dill dressing - or - non-fat mayo with 1/8 tsp. dill weed mixed in.
1 pita (1-oz), cut in half crosswise
Leaf lettuce or fresh spinach leaves
2 slices of tomato
Alfalfa sprouts if desired

Preparation
Mix the chopped egg, grated cheese, dressing. Place the lettuce and tomato in the pita. Add the egg mixture. Top with sprouts if desired. Keep refrigerated.

I used Miracle Whip Light for my reduced calorie dressing and 2% shredded cheddar. Using these items, the egg salad mixture came out to 244 calories. Add in the calories for whatever brand pita and veggie toppings you use, and there you have it: a nice, healthy lunch around 300 calories. YAY! :)
