I've been trying to find something to do with apples that are just starting to get soft. I can't really stand to eat them raw, and that's about the only way I like them unless they're in bread, which is usually high calorie/carb. I've searched through a lot of recipes for something EASY and low cal. Any suggestions? Before the apples go bad!?

    Any-Fruit Coffee Cake

Bake 40–45 minutes in a preheated oven 350° - greased 9” square pan

2 cups raspberries or 2 cups of chopped, peeled apples, apricots, peaches, pineapple, or blueberries
    1 Tablespoon lemon juice
    ½ cup sugar
    3 Tablespoons cornstarch

In a medium saucepan, combine fruit and ½ cup water.
Simmer covered, for 5 minutes, or until tender. Stir in lemon juice. Mix the sugar and cornstarch and stir into the fruit mixture. Cook and stir until thickened. Cool.

    1½ cups flour
    ½ cup sugar
    1 ½ teaspoons baking powder
    ½ teaspoon cinnamon
    1/8 teaspoon mace
    ½ cup butter

In a large bowl stir together the dry ingredients and cut in the butter until crumbly.

    1 slightly beaten egg
    ½ cup milk
    ½ teaspoon vanilla

Combine the egg, milk, and vanilla. Add to the flour mixture, mixing until blended. Spread half the batter into the prepared pan.
Spread the cooled fruit over the batter. Spread the remaining batter over the fruit.

Note: This is a recipe I have had for years and have made many, many times.
P.S. Just because you make it does not mean you have to eat the whole thing. Cut into serving sizes and freeze, then enjoy one piece here and there!!! lol

Here is my old recipe for Apple Muffins that I have had since I was in my teens! I love these. When I take them out of the muffin tin I put on a cooling rack and the outside gets kind of crispy and the inside is heavenly soft!!!!! :flowerforyou:

    Apple Muffins

    1 cup flour
    1 teaspoon cinnamon
    ½ teaspoon baking powder
    ¼ teaspoon salt
    1 egg
    ½ cup oil
    ½ cup sugar
    ½ teaspoon vanilla
2 cups peeled and chopped apples
    ½ cup walnuts

Preheat oven to 350° - Lightly grease a 12-cup muffin pan

    1. Mix flour, cinnamon, soda, and salt

    2. Beat egg until foamy, beat in oil, sugar, and vanilla

    3. Stir in flour mixture until blended

    4. Stir in apples & walnuts

    5. Spoon into prepared muffin cups

    Bake 20 – 25 minutes. Cool.

Remove from pan onto wire rack.

    Yield: 12 muffins

    Calories: 201 each

Note: Maybe to cut calories you could substitute applesauce for the oil.

Pork w/ apples and/or sweet potatoes is a great combo. Sorry, I don't have any recipes off the top of my head, but if you google, there are lots of examples. If you have a crock pot, you can "set it and forget it" and have a nice dinner ready later or tomorrow.

I like to cut up an apple and sprinkle it with cinnamon and some apple pie spice. 5 min in the microwave and it's as good as any baked apples I've had. I do this a lot.

Do you have a juicer? Make fresh juice.

Or, shred them and put into a smoothie using your blender (if you have one).

If you eat salads you can cut into cubes and mix in.

I tried this one first, and it is AMAZING! Here are the steps I found online (somewhere! sorry, can't cite better!):

    1. slice apples thin (keep them uniform; I used a slicer)
    2. lay them in a single layer on a cookie sheet or jelly roll pan
    3. sprinkle with cinnamon (I also added a tiny bit of cloves, and boy, did the house smell divine!)
    4. put them in the oven at 200 degrees for two hours, propping the oven open just a tad, with a wooden spoon (or something; I improvised!)-- this allows the moisture to escape
    5. once you take them out, let them sit until cool, and then they will be crispy and DELICIOUS!

EASY Applesauce.... skin and chop apples and put in slow cooker. Add a little water, some lemon juice, cinnamon and sweetener (optional) and cook until soft. Use a potato masher to break down the chunks and if you want it even smoother let it cool and blend.

    Cranberry and Apple Crumble

This simple dessert satisfies. Serve it with vanilla ice cream. We used Braeburn apples, but Fuji, Gala, Granny Smith, or any other tart variety will do.This is SUPER AWESOME..I used golden raisins in place of cranberries...

Yield: 8 servings (serving size: 2/3 cup)

    Ingredients
    1/2 cup all-purpose flour
    1/4 cup granulated sugar
    1/4 cup packed brown sugar
1/4 cup chilled butter, cut into small pieces
6 cups sliced peeled Braeburn apple
    1 cup fresh cranberries
    1/3 cup fresh orange juice
    2 tablespoons granulated sugar
    1 tablespoon cornstarch
    Preparation
    Preheat oven to 375°.

Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, 1/4 cup granulated sugar, brown sugar, and butter in a food processor; pulse 10 times or until mixture resembles coarse meal.

Combine apple and cranberries in a large bowl. Combine juice and remaining ingredients; pour over apple mixture. Toss well. Spoon apple mixture into a 2-quart baking dish. Sprinkle with flour mixture. Bake at 375° for 40 minutes or until bubbly and golden brown. Serve warm.

    APPLE CRISP
    Serves 6

    INGREDIENTS:

    • 3 medium apples (Gala or Fuji)

    • 1 teaspoon grated orange zest

    • 1 teaspoon grated lemon zest

    • 2 tablespoons freshly squeezed orange juice

    • 2 tablespoons freshly squeezed lemon juice

    • 1/4 cup sugar substitute (Splenda or Stevia)

    • 1/4 cup all-purpose flour & whole wheat flour (half/half)

    • 1 teaspoon ground cinnamon

    • 1/2 teaspoon ground nutmeg

    For the topping:

    • ¼ cup all-purpose flour & whole wheat flour (half/half)

    • 2 tablespoons sugar substitute (Splenda or Stevia)

    • 2 tablespoons cup light brown sugar, lightly packed

    • 1/4 teaspoon kosher salt

    • 1 cup old-fashioned oatmeal

    • 3 tablespoons cold “I Can’t Believe It’s Not Butter” , diced

    • 2 tablespoons honey

    DIRECTIONS:

Preheat the oven to 350 degrees F.

Peel, core, and cut the apples into large chunks. Place the apples in a large bowl and add the zests, juices, “sugar”, flours, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish. (I used a pie pan and it worked perfectly!)

    For the topping:

Combine the flours, sugars, salt, oatmeal, “I Can’t Believe It’s Not Butter” and honey in the bowl of an electric mixer fitted with the paddle attachment (hand-held mixer also works well). Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the apples, covering the apples completely.

Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm; perhaps with a scoop of low-fat vanilla ice cream or frozen yogurt?

BAKED CARAMEL APPLE PIE ~ PHILLY STYLE!
    Serves 8

    INGREDIENTS:

    1 package Pillsbury Reduced-Fat biscuits (8 biscuits)
4 ounces FAT FREE Philadelphia Cream Cheese
    2 tbsp. "I Can't Believe It's Not Butter"
3 Granny Smith Apples (peeled & sliced thinly)
    1/2 cup light brown sugar
    flour
    cooking spray

    DIRECTIONS:
    Preheat oven to 375 degrees.

In a pan over medium-heat, melt butter and brown sugar; creating the caramel for the pie filling. To the caramel, add the sliced apples. Stir in apples until caramel is worked in. Next, add the softened Philadelphia Cream Cheese. Stir frequently, until cream cheese in completely melted and coating the apples.

To prepare the pie crusts, roll out each biscuit until roughly 6-8 inches wide. Use flour to prevent dough from sticking to the surface and the roller.

Evenly spoon the apple mixture onto the center of each pie crust. Take a little bit of water and run your fingers along the edge of the pie. Fold one side of the pie over and seal. Use a fork to secure the seams of the pie crust by pressing along the folded edge.
As Paula points out, we don't want to lose any of that goodness inside!

Place pies on a prepared baking sheet. Bake for 15-18 minutes; or until golden.

Serve with a scoop of frozen vanilla yogurt and drizzle with sugar free caramel. YUM!

    THE RESULTS:

AMAZING! The biscuits are really a great idea for a pie crust. The are so soft and flavorful. Plus, they come in a reduced-fat variety. Bonus! Overall, if you are looking for an easy and impressive dessert, this is a hit. Since we use biscuits, we could even enjoy this for breakfast, right? If apples aren't your thing, try this recipe using any variety of fruit; peaches, pears or cherries. I really don't think you can go wrong.

In my opinion, the best way to have this dessert is to serve it warm. I made mine before dinner, so when it was dessert time, I just threw mine in the microwave for about 20 seconds. Then I topped it off with a scoop of fat free vanilla ice cream and drizzled on some sugar free caramel. Each bite was just heaven!

I really hope you decide to give this recipe a try. It is the perfect dessert for every season. A true classic! Thanks again for the inspiration, Paula.

GRANDGIRL'S FRESH APPLE CAKE FROM GEORGIA
    Serves 16 to 20

    INGREDIENTS

    CAKE:
PAM Spray, for greasing the pan
    2 cups SPLENDA
    3 eggs
1 1/2 cups UNSWEETENED APPLE SAUCE
    1/4 cup orange juice
    3 cups all-purpose flour
    2 teaspoon baking soda
    1/4 teaspoon salt
    1 tablespoon ground cinnamon
    1 tablespoon vanilla extract
3 cups peeled and finely chopped apples

    TOP IT OFF:

Vanilla LIGHT ice cream or FROZEN YOGURT
    SUGAR FREE caramel toppingDIRECTIONS

Preheat the oven to 325 degrees F. Generously grease a tube pan.

For the cake: in a large bowl, combine the SPLENDA, eggs, apple sauce, orange juice, flour, baking soda, salt, cinnamon and vanilla extract; and mix well. Fold apples into batter.

Pour the batter into the prepared pan and bake until a tester comes out clean, about 1 1/2 hours.

When you are ready to serve, cut a slice and top with a scoop of LIGHT or FAT FREE vanilla ice cream. Then lightly drizzle caramel topping. Cake is best when served warm. If eating later, reheat a slice in the microwave for about 20 seconds before topping with ice cream and caramel.

    THE OUTCOME:

Take away all the sugar and oil, and it is still a really tasty treat. The ice cream and caramel top it off perfectly. It makes a great dessert, but is also a good compliment to your morning coffee (without the ice cream...or with).

Just for fun, I figured the amount of fat I was saving just by substituting apple sauce for the vegetable oil. Get ready to be shocked!

    For the entire recipe...

Veggie oil- 336 grams of fat/ 2,880 calories
Apple Sauce- 0 grams of fat/ 150 calories
