Low-cal recipes using apples??

I've been trying to find something to do with apples that are just starting to get soft. I can't really stand to eat them raw, and that's about the only way I like them unless they're in bread, which is usually high calorie/carb. I've searched through a lot of recipes for something EASY and low cal. Any suggestions? Before the apples go bad!?

put them is a eay 9x9 pan or what ever fits then pour diet black cherry soda over sprinkle with Cinnamon and bake 350 until done0

I like making my own apple chips. Sprinkle a little cinnamon or pumpkin pie spice on them and put them in the oven...super good!!0

you could make applesauce out of them. i don't have a recipe but I'm sure you can find one online. homemade applesauce is the best!0

Raw Grated Carrot & Apple Salad
2 large peeled carrots
1 peeled apple
1/4 cup organic raisins
1/4 cup organic apple juice (or orange juice)
Finely grate (or process through Champion, Green Life, or Green Power juicer with blank in place instead of screen) carrots and apple. Place in a bowl and stir in raisins and juice. Let sit 15 to 30 minutes in refrigerator to plump raisins. Adjust for size of family.0 -
RAW APPLESAUCE (Serves 4)
6 large apples, cores removed
Juice of 1 lemon
8 dates
1/2 teaspoon cinnamon
Process in food processor with an S blade.0 -
Any-Fruit Coffee Cake
Bake 40–45 minutes in a preheated oven 350° - greased 9” square pan
2 cups raspberries or 2 cups of chopped, peeled apples, apricots, peaches, pineapple, or blueberries
1 Tablespoon lemon juice
½ cup sugar
3 Tablespoons cornstarch
In a medium saucepan, combine fruit and ½ cup water.
Simmer covered, for 5 minutes, or until tender. Stir in lemon juice. Mix the sugar and cornstarch and stir into the fruit mixture. Cook and stir until thickened. Cool.
1½ cups flour
½ cup sugar
1 ½ teaspoons baking powder
½ teaspoon cinnamon
1/8 teaspoon mace
½ cup butter
In a large bowl stir together the dry ingredients and cut in the butter until crumbly.
1 slightly beaten egg
½ cup milk
½ teaspoon vanilla
Combine the egg, milk, and vanilla. Add to the flour mixture, mixing until blended. Spread half the batter into the prepared pan.
Spread the cooled fruit over the batter. Spread the remaining batter over the fruit.
Note: This is a recipe I have had for years and have made many, many times.
P.S. Just because you make it does not mean you have to eat the whole thing. Cut into serving sizes and freeze, then enjoy one piece here and there!!! lol0 -

Here is my old recipe for Apple Muffins that I have had since I was in my teens! I love these. When I take them out of the muffin tin I put on a cooling rack and the outside gets kind of crispy and the inside is heavenly soft!!!!! :flowerforyou:
Apple Muffins
1 cup flour
1 teaspoon cinnamon
½ teaspoon baking powder
¼ teaspoon salt
1 egg
½ cup oil
½ cup sugar
½ teaspoon vanilla
2 cups peeled and chopped apples
½ cup walnuts
Preheat oven to 350° - Lightly grease a 12-cup muffin pan
1. Mix flour, cinnamon, soda, and salt
2. Beat egg until foamy, beat in oil, sugar, and vanilla
3. Stir in flour mixture until blended
4. Stir in apples & walnuts
5. Spoon into prepared muffin cups
Bake 20 – 25 minutes. Cool.
Remove from pan onto wire rack.
Yield: 12 muffins
Calories: 201 each
Note: Maybe to cut calories you could substitute applesauce for the oil.0 -
Pork w/ apples and/or sweet potatoes is a great combo. Sorry, I don't have any recipes off the top of my head, but if you google, there are lots of examples. If you have a crock pot, you can "set it and forget it" and have a nice dinner ready later or tomorrow.0

I like to cut up an apple and sprinkle it with cinnamon and some apple pie spice. 5 min in the microwave and it's as good as any baked apples I've had. I do this a lot.0

Apple Nut Crunch (9 servings)
1 egg
¾ cup sugar
1/3 cup flour
1 teaspoon baking powder
1/8 teaspoon cinnamon
1 cup peeled and chopped apples
½ cup chopped walnuts
1 teaspoon vanilla extract
1. In a mixing bowl, beat the egg.
2. Combine the sugar, flour, baking powder and cinnamon.
3. Add to the egg.
4. Beat until smooth.
5. Fold in apples, nuts, and vanilla.
6. Spoon into a greased 8” square baking pan.
7. Bake at 350 degrees for 25-30 minutes. Cool.
You are supposed to serve this with ice cream, but DON’T!!!! lol
Note: It says 9 servings, but It’s more like 4 to me. :noway:
Also: I bet you could reduce the sugar to 1/2 cup with no problem.0 -
Apples make good a good stuffing ingredient!0

Do you have a juicer? Make fresh juice.
Or, shred them and put into a smoothie using your blender (if you have one).
If you eat salads you can cut into cubes and mix in.0 -

I tried this one first, and it is AMAZING! Here are the steps I found online (somewhere! sorry, can't cite better!):
1. slice apples thin (keep them uniform; I used a slicer)
2. lay them in a single layer on a cookie sheet or jelly roll pan
3. sprinkle with cinnamon (I also added a tiny bit of cloves, and boy, did the house smell divine!)
4. put them in the oven at 200 degrees for two hours, propping the oven open just a tad, with a wooden spoon (or something; I improvised!)-- this allows the moisture to escape
5. once you take them out, let them sit until cool, and then they will be crispy and DELICIOUS!0 -

EASY Applesauce.... skin and chop apples and put in slow cooker. Add a little water, some lemon juice, cinnamon and sweetener (optional) and cook until soft. Use a potato masher to break down the chunks and if you want it even smoother let it cool and blend.0

Cranberry and Apple Crumble
This simple dessert satisfies. Serve it with vanilla ice cream. We used Braeburn apples, but Fuji, Gala, Granny Smith, or any other tart variety will do.This is SUPER AWESOME..I used golden raisins in place of cranberries...
Yield: 8 servings (serving size: 2/3 cup)
Ingredients
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup chilled butter, cut into small pieces
6 cups sliced peeled Braeburn apple
1 cup fresh cranberries
1/3 cup fresh orange juice
2 tablespoons granulated sugar
1 tablespoon cornstarch
Preparation
Preheat oven to 375°.
Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, 1/4 cup granulated sugar, brown sugar, and butter in a food processor; pulse 10 times or until mixture resembles coarse meal.
Combine apple and cranberries in a large bowl. Combine juice and remaining ingredients; pour over apple mixture. Toss well. Spoon apple mixture into a 2-quart baking dish. Sprinkle with flour mixture. Bake at 375° for 40 minutes or until bubbly and golden brown. Serve warm.
