Diet cake recipes? Anyone?

Does anyone have any healthy, low cal cup cake (preferably choc or choc chip. lol) or cookie recipes (gingerbread, choc chip)?

If you take a cake mix and mix it with 12oz of diet pop and nothing else, you can bake it just like a regular cake or cup cakes and get a really low cal dessert. We "frost" it with cool whip. You can use any flavor cake and pop that you want.0

You can just use box cake mix and add diet soda instead of oil and eggs and that cuts calories. Also I will use a cake mix with just egg whites and replace the oil with nonfat greek yogurt.0

I made cupcakes for the super bowl party I was attending. I used a 50% less sugar box of cake mix and instead of using the eggs and oil you mix it with a can of diet coke. I was suprised that it was already in the data base. My friend said that if you do cupcakes you can cook them the normal time but if you are doing a cake you cook it for a few minutes less than the box says especially if you are going to take it out of the pan that you cooked it in. They were soooo good, and no one could tell the difference. In fact, I got a lot of compliments about how moist they were. Hope that helps0

I have used the last recipe a good few times - the trick is to beat the mixture for a long time until it's really light and fluffy. The sponge is lovely and light and tastes indulgent, especially with a dollop of low fat whipped cream (like Elmlea) & strawberries. They don't keep well though, so it's usually best to make a small amount and eat on the day you make them.

Oh I have a great one I just made this past weekend. If you like pumpkin... this is great.
Ingredients:
1 15 oz. can Pure Pumkin (not the pumpkin pie filing)
1 box Spice Cake mix (Betty Crocker or any brand)
Beat them together and bake according to the cake mix package.
It's a bit dense (almost bar-like, thick). But, with some cool whip on top it's delicious. Try it!0 -
Do you like brownies? There's a recipe on here for "black bean brownies". Try that one too... its' great. You cannot taste the black beans, I swear! And it adds a lot of fiber.0
