Layered Breakfast Cake

Ingredients
1 cup rolled oats
1 tbsp ground flaxseed
1 cup boiling water
1 cup apple juice
1 cup milk of choice (I use unsweetened almond milk)
1 scoop protein powder
1 tsp vanilla essence
1 tsp cinnamon
2 granny smith apples chopped
1/2 cup dried cranberries
1 tbsp lemon juice
Instructions
1. Preheat the oven to 350 degrees fahrenheit.
2. In a large pot combine oats, flaxseed, boiling water, apple juice, milk, protein powder, vanilla essence and cinnamon. Mix well and set aside for 15 minutes.
3. Meanwhile, mix apples and cranberries with lemon juice. Transfer this mixture to a large casserole dish.
4. After 15 minutes the oat mixture should have soaked up a bit of the liquid. Place pot over medium heat and bring to boil. Boil for 1 minute, then remove from heat.
5. Carefully spoon oat mixture over fruit and bake in the oven for 30 minutes or until golden brown.
6. Let cool slightly before serving.
