Blackened shrimp tacos

I made these last night for my hubby and I and they were SOOOO delicious!


Serves 2

4 carb balance mission tortillas (soft taco size)
8 oz. raw shrimp pealed, deveined and tails removed
1/2 tsp each: granulated garlic, adobo chili powder, sea salt, dried cilantro, smoked paprika
1 tsp. butter
juice of one lemon
1c. shredded cabbage
roasted tomatillo salsa
1/4 slice avocado
2 tsp. crumbled cotija or low fat feta cheese
1 can black beans heated

Mix all seasonings in a bowl and add shrimp, toss to coat. Heat tortillas in skillet and keep warm in a towel. Heat oil in nonstick skillet over medium high heat. Add shrimp in single layer. Cook 2 min, flip, add lemon juice and cook til no longer pink and lightly charred. Divide shrimp in the four tortillas, top with cabbage, tomatillo salsa, avocado and cheese. Serve with a side of black beans.
