Delicious slow-roasted tomatoes

Here's a recipe I've done for a while now for juicy, sweet slow-roasted tomatoes. Tomatoes are highly anti-carcinogenic when roasted, so super healthy and delicious as an accompaniment to a meal, or just simple tomatoes on toast!
half dozen of vine tomatoes chopped in half
sprinkle with a touch of salt, cracked black pepper and parsley or corriander/both
roast in a low heat oven (around 120/130 degrees C) for around 1.5 hours

I do this too! Delicious. I also vary each time I do it. Sometimes add a chopped red onion. Maybe some garlic granules. Sometimes some herbs. I also do a larger batch and keep it in the fridge for on toast etc. Yummy!0

They sound good, going to go in the kitchen and make them for dinner tonight. Going to roast sweet peppers with them as well.0
