Zesty Mexican Soup

This is a really great recipe for a full of flavor soup!


Ingredients

1 medium raw onion
4 clove(s) garlic clove(s) (medium)
2 Tbsp crushed red pepper flakes
3 cup(s) fat-free chicken broth
1 item(s) bell pepper(s) (medium)
1 small zucchini
1 cup(s) collard greens
1 cup(s) canned diced tomatoes
1 cup(s) canned black beans
1 cup(s) frozen corn kernels
1/2 cup(s) canned green chili peppers
1 tsp ground oregano
1 tsp Durkee Ground Cumin Seed
1/4 cup(s) pumpkin seeds (unhulled)
1/2 cup(s) cilantro
1/2 tsp black pepper
1 tsp sea salt

Instructions

Heat 1 TBS broth in a medium soup pot. Healthy Sauté onion, garlic, and green peppers in broth over medium heat for about 5 minutes, stirring often.
Add red chili powder and mix in well. Add broth, zucchini, collard greens, and tomatoes. Cook for another 5 minutes and add beans, corn, green chili, oregano, and cumin.
Bring to a boil on high heat. Once it begins to boil, reduce heat to medium-low and simmer uncovered for 15 minutes longer. (Simmering uncovered enhances the flavor.) Add chopped cilantro, pumpkin seeds, salt, and pepper.
Serves 6
