Chicken with Portobello Enchiladas

2 oz reduced fat sour cream
6 oz raw chicken breast, no skin
2 oz raw cilantro
1/2 cup diced portabello mushrooms
1/4 cup raw chopped onions
2-1/4 oz canned green chilies
2 flour tortillas, 8 inch
4 oz reduced fat, shredded cheddar cheese
Prep & Cooking Time: 1 hr. 0 min.
Yield: 4 servings Serving Size: 2.5 oz
Directions:
Preheat oven to 350 degrees F (177 degrees Celcius)
Coat a 9 by 13 inch baking dish with nonstick cooking spray and set aside, in a large bowl, combine chicken and all listed ingredients
Pour half of mixture onto each tortilla, roll tortilla and place in baking dish
Bake for 30 to 40 minutes. Each tortilla will serve two
