Need healthy SIDE DISHES ideas!

I am looking for some great side dish options. So far this week I have made fresh broccoli with teryaki sauce and mashed sweet potatos. I just don't want to make boxed items. I am feeding myself, plus 3 kids and my husband. Gotta keep them happy but healthy!

    rice, steamed veggies... stirfry; you can always make soup.... Um, salad is great too, and by changing your greens (IE. Baby mix, lettuce, romaine, spinach, etc etc...) You can make a different salad every day!! you can also go for grilled veggies, and cook almost anything on the BBQ!

    Steamed veggies.. sauteed fresh asparagus with snow peas (my fav)

    Raw veggie side salads are always good and there are unlimited varieties!
    Lightly steamed carrots are fun and healthy to eat.
    Any steamed veggies are good. I sometimes like to sprinkle lemon pepper on them.
    Homemade coleslaw is good and easy.
    Baked sweet potato sticks brushed with maple syrup.
    Red beans.
    Baked potato.
    Couscous.

    One medium sized rutabaga and 6 carrots..cut, boil them together, drain and then mash using a hand mixer with a little skim milk & a little butter (butter optional)...VERY low in calories and is a great substitute for potatoes on the plate..colorful too!

    Roasted carrots or asparagus and brown rice are two of my favourites.

    If you like spicy this is a good option. It just takes a little time.

    Curry Potato Salad- serves 4

    1 pound redskin potatoes
    1/4 cup raisins
    1/4 cup almonds chopped

    Dressing
    1/2 cup greek yogurt
    2 tbsp mango chutney
    2 tsp madras curry powder

    1 boil your potatoes. Let them cool before working with them
    2. Cut them into bite sized pieces. Place them in a large bowl
    3. Add raisins and almonds
    4. Mix all dressing ingredients in a small bowl.
    5. Add dressing to potato mixture, being sure to saturate ingredients with dressing.
    6. Chill at least 2 hours before serving

    It really has a lot of flavor. And my husband loves it! Its only 235 calories per serving! If you wanted you could always omit the almonds or raisins to save a few calories, but they add a lot to the salad.
  • -Brussel sprouts cooked with fresh lemon juice is one of my favorites.
    -DIffering salads with romaine lettuce, carrots, red/orange bell peppers is also pretty delicious (plus you can make extra for lunches in the coming days)
    -Kids love fries so try sweet potato fries!
    -Ever tried beets? Many people shy away from them becuase they havent (and bc they turn your fingers red if you touch a fresh cut one). Beets can be cooked and served as a side or cut up raw and put in a salad.
    -Squash is a great side dish. Look for some butternut squash recipes
    -Slice some zucchini and cook it and serve with some pepper on top
    -Asaparagus cooked in the oven with some olive oil and pepper can be pretty delicious (just has stinky side effects)
    -Lastly, salads with apples on top. Many kids like the taste of apples so dicing up some apples on top of a healthy salad can coax them into eating healthy
