Made these tonight and they were super yummy and easy to make!
The recipe yields 8 small patties at 50 calories each. I ate 3 with dinner tonight and found them super filling.
Ingredients:
250g good quality turkey mince (yanks would call it 'ground turkey')
1 small onion, diced
2 cloves garlic, chopped and crushed
3 small/med button mushrooms, diced into small pieces
1 tbsp chopped parsley
Sprinkle of parmesan cheese
1 egg
2 tbsp bread crumbs (if on no/low carb diet don't add crumbs add another egg to help bind the mixture)
2 tsp fat free plain yogurt
1 tsp Thai green curry paste
1 tsp mustard
Salt and pepper to taste
(Now I chose to add the mustard and curry paste since they were in my fridge and I love those flavours... But you can add whatever you like.... Sweet chilli, chutney, wasabi. Be creative FYI The mustard and paste only added an extra 32 calories to recipe)
Mix all the ingredients together until well combined, then using a spoon scoop out mixture to form a small pattie, roughly 2 inches across.
Fry over medium heat in a non-stick pan until cooked through. (I used a little spray on oil on my pan but it's up to you.)
*Careful flipping them if you don't add the breadcrumbs as they may be liable to fall apart.
I served them with mashed potato and steamed vegetables. My 1 yo found them especially tasty
