Low sodium salad dressings....

My husband is part of a healthy program at his work and yesterday they handed out a sheet of different salad dressings that are low sodium. I am so excited because I had salad for dinner last night and 2 tbsp of low fat dressing had 430 mg sodium! so i know there are people on here that are looking for low sodium foods ( like me ) so i thought i would post the recipies here for everyone.
Red wine vinaigrette:
6Tbsp extra virgin olive oil
1 1/2 tbsp red wine vinegar
1/8 tsp. ground black pepper
Combine all ingredients in a jar or sealed container and shake. Makes 8 TBSP.
Mustard and Balsamic Vinaigrette
6tbsp extra virgin olive oil
1 1/2 tbsp balsamic vinegar
1tbsp dijon mustard
1 tsp finely minced shallot or green onion
1/8 tsp ground black pepper
combine all ingredients in a container and shake. makes 8 tbsp.
Creamy Garlic vinaigrette
1/4 cup extra vigrin olive oil
2tbsp plain low fat yogurt
1tbsp white wine vinegar
1tbsp juice from 1 lemon
2 tsp dijon mustard
1 small garlic clove, minced
ground black pepper to taste
combine in a sealed container and shake. makes 8 TBSP.
Ranch salad dressing
1 1/4 cup soy milk
1 (12 oz) pkg. mori-nu silken tofu
1 (1oz) pkg ranch salad dressing mix
place ingredients in a blender or food processor and process until smooth. place dressing in airtight container and place in fridge. makes 2.5 cups.
Creamy tofu dressing
1/2 cup soft tofu
2tbsp cider vinegar
2 tsp honey
2 garlic clove, minced
1/2 tsp dijon mustard
black pepper to taste
combine all in food processor and process until smooth.
Poppy seed dressing
1/3 cup sugar
1/4 cup cider vinegar
2 tbsp canola oil
1tbsp. poppy seeds
1/4 tsp paprika
1/4 tsp worcestershire sauce
combine sugar, vinegar and canola oil in saucepan and cook over low heat until sugar is dissolved, stirring frequently. cool slightly then stir in poppy seeds, paprika and worcestershire sauce.
Herbed Merlot dressing
1/2 cup merlot or cabernet sauvignon
2tbsp extra virgin olive oil
2 tbsp chopped fresh basil
2 tbsp chopped fresh oregano
2 tsp minced fresh garlic
combine all ingredients in a sealed container and shake.
Dijon dressing
1/4 cup low fat low sodium chicken broth
1/4 cup white wine vinegar
2 garlic cloved minced
2 tbsp extra virgin olive oil
2 tsp dijon mustard
1 tsp sugar
1/2 tsp ground black pepper
combine all ingredients in a sealed container and shake.
caesar dressing
6 tbsp white wine vinegar
1/4 cup freshly grated parmesan cheese
3 tbsp extra virgin olive oil
2 tbsp minced onion
6 garlic cloves, minced
2 tsp dijon mustard
black pepper to taste
combine all ingredients in a food processor and process until smooth.
