Lentil ideas...anyone?

Bought some lentils for the first time...any ideas??

    Look on allrecipes.com and search for lentils -- lots of good recipes. There are also a few threads here on MFP about them. Lentils are awesome. :)

    I'm looking forward to your answers :) I love lentils (even the progresso lentil soup)... but not when I cook them - I don't know what I'm doing wrong, but something ain't right - LOL
  • At least 2x a month I make a big pot of lentil soup. It is filling, healthy, and delicious. I saute onion in a very small amt. of olive oil, and then add a bag of lentils along with about 6-8 cups of water and let them come to a boil and simmer for about 20 minutes. Then I add 1 can cannelini beans (rinsed) 1 can black beans (rinsed), 1 can chicken broth, carrots, greens such as kale, endive, spinach, or any greens that you like, 1 28-oz. can of tomatoes (can be stewed, diced, or whatever you like. I often add turkey sausage which give it a nice flavor. I cook the sausage and cut it into small pieces and then add it. The beauty of this soup is that you can get creative and add any beans or veggies that you like or more liquid if you want, and let it all simmer for about an hour. I season with salt and pepper add some oregano and whatever else I feel like adding. The soup freezes well too. Lentils are high in protein and fiber.

  • I just tried a recipe last night that I found on MFP for Lentil "meat"loaf. it was so delicious! and really filling and low-cal. here's the recipe
