IN MY OVEN!!!

I'm making the HG Peanut Butter Brownie "Fudge" from the new cookbook. It smells soooo good!

Good thing they are only 60-something calories a piece! :noway:

Better Jazzercise again tonight!

1 box (18.3 oz) Betty Crocker Fudge Brownies Traditional Chewy Brownie Mix
2 cups pumpkin (not the pumpkin pie stuff, pure pumpkin from the can)
2 Tbsp Reduced fat Peanut butter

    Preheat to 350*.
Mix brownie mix and pumpkin until smooth, will be thick, don't add anything.
Grease 9x9 square pan, pour in batter.
Spoon peanut butter on top and use a knife to swirl it around.

Bake 35 minutes, allow to cool completely
Cover pan w/ foil and refrigerate for at least 2 hours.
    Cut into 36 squares.

    Makes 36 servings.

    Per serving: (1 piece) 65 cal, 1g fat, 57mg sodium, 14g carbs, 1g fiber, 9g sugars, 1g protein

Thanks for sharing - sounds great! Can I skip the PB do you think? Maybe do canola oil instead? (peanut allergies in my house)

    What is "HG"???

Well the peanut butter is part of the flavor.. it's like a brownie/fudge but w/ swirls of peanut butter... I don't think you'd want to sub oil for that. Maybe just use 2 tbsp of like a cream cheese or vanilla frosting.. it's about the same calories as 2 tbsp of peanut butter...

I've done this without the Peanut Butter, just mix the brownie mix and pumpkin (no peanut butter allergies in my house, but it's not a safe food for me to have around) and it worked fine.

    HG = Hungry Girl http://www.hungrygirl.com

I made the "fudge". Wasn't real impressed... Taste ok, but the texture is rather "dense" and spongy.

    Won't make them again :ohwell:

Question though... can you just eat one? Or are they addictive? I don't want to make a batch and then be sitting in an alley somewhere on a brownie high:laugh:

The servings are pretty small, about 1" x 1", if the texture were different I'd probably eat 2 or 3 at a time.
