This makes 5 servings @271 calories.... and was exactly what I needed to fight my cold.
2 hot italian sausages
1 onion, chopped
1/2 C lentils
1/2 C brown rice
1 can no/low sodium vegetable broth
Brown sausage, add onions & cook until soft. Stir in rice & lentils, add broth & cover. Reduce heat & simmer until rice is tender (40 minutes +).
I had 1/2 a serving on a roasted mushroom with 1/2 a left over baked potato and 1/2 T blue cheese on top. So amazingly good.
