Does anyone have any recipes to share that are easy and fast to make at night so I can pack my food for work the next day.....

I pack cereal for my desk all week and put unsweetened soy/almond milk in fridge.0

I pack all my food the night before for the next day...feel free to view my diary for ideas :-)
I make several "bulk" meals on the weekends and take for left overs during the week like mushroom casserole (101cookbooks.com), black bean quiona, chili, pancakes, etc.
Planning is the key to success0 -
making bulk meals is the best---roast a turkey, roast some chicken----nibble on lean protein throughout the day (it does not matter if you go over on lean protein). Add a few healthy carbs- .i.e. yogurt, whole grains, add some nuts (good fat for ya), and lots and lots of steamed or fresh veggies----Good luck0

I just make double my dinner and pack half up for the next day's lunch (this works for Hubby too).

I mixed a can of black beans, a can of garbanzo beans, a cup or so of salsa, some ground chipotle or chile powder, and divide it out into single servings and toss in fridge or freezer. Then just grab a serving and a pita or tortilla- heat at work & eat0

My new favorite and what I had today is a veggie burrito. The recipe calls for 1/2 cup of vegetarian refried beans in a 8 in whole-wheat tortilla shell but good luck getting that to roll up. lol. I make it into more of a mexican pizza. I take a 1 cup storage container and fill it with 1/2 cup vegetarian refried beans, 1/4 frozen corn, and 2 tbsp reduced fat cheddar cheese. I pack another small container with 1/4 salsa. Then I pack my tortilla in a baggie. The tortillas I buy at meijer don't break when I fold them to I fold it into quarters to fit in the baggie. At work I lay out the tortilla spread on the refried bean mix and microwave for about 1 min until the cheese is melty. Then I add my salsa on top and cut into pieces and/or eat it with a fork.
I always take sliced raw veggies.
Another favorite is chive and onion or garden veggie cream cheese spread on crackers like wheat things and topped with lunch meat. Like a grown-up lunchable.0 -
Salad! But with the right balance of proteins and fats to keep it filling! And to keep it crisp, I toss it all together at work.
I wash and chop 2 or 3 cups of all my veggies and put them in a tupperware with maybe some feta or nuts the night (or I make a few of these on sunday). I grab a pack of flavored tuna and a bottle of caesar dressing to take with me. I mix it all together at work and its still amazingly crisp and all the chewing makes you slow down and enjoy it.0
