I like to shred my chicken add some low fat mayo, mustard, some cranberries and walnuts for a tasty and healthy chicken salad. It's about 230 cals for a serving. You can add it to greens or on toast for a sandwich.0

I have an awesome low calorie/low fat recipe. It is so easy and delicious!
Ingredients:
One pound of boneless/skinless chicken breasts
One medium onion
One 14.5 oz can of petite diced tomatoes (may include more if you'd like)
One tablespoon diced garlic
3/4 cup of lowfat balsamic vinegarette (I use Kraft's version)
Lowfat finely shredded parmesan cheese
Directions:
Pre-heat oven to 450 degrees.
Prep:(< 10 min)
Cut onion into thin rings. Line the bottom of a 11x13 glass baking dish with the onions.
Combine the tomatoes, garlic, and vinegarette in a small mixing bowl.
Line the chicken breasts on top on the onion-lined baking dish.
Pour the tomato/vinegarette mixture on top of the chicken breasts in the dish.
Sprinkle desired amount of cheese over each chicken breast.
Bake time:
Bake at 450 degrees uncovered for 45 minutes. (Depending on the size of the chicken breasts, baking time may vary).
This recipe is one of my favorites!! Enjoy

For a simple lunch I like to make a sandwich from grilled or broiled chicken on whole grain bread, using mashed avocado in the place of mayonnaise.
If you want to get fancy, add diced fresh tomato, a little minced onion and garlic, and a little bit of lemon juice to the avocado. (That's guacamole as I learned to make it nearly 40 years ago by watching the Sunday picnickers prepare it at the public lodge on Mount Popocatepetl, near Mexico City. That was the first time I ever saw an avocado)
Avocado is great on ham sandwiches too, and seems to go especially well with whole wheat or whole grain.0
