Good Dinner to Up Protein- Low Carb, Not Eggs??

I am looking for something I can make for dinner that is simple & easy that has protein, low carbs and isn't eggs/breakfast. I thought about making a sandwich, but too many carbs. I am eyeballing my sons poptart which he forgot on table this morning and it looks so good- I am such a carb junkie.

I forgot to put out turkey, chick or lean beef to defrost so I am limited to roast beef or turkey oscar mayer carving board style or turkey pepperoni or turkey meatballs as far as meats go. Thought about spaghetti with the turkey meatballs, but then again, my carb intake is going to be more than my protein, again.

Thanks for any suggestions

    eggplant pizza! just use eggplant instead of crust :]

    curious... if you love carbs then why deprive yourself?

    Because I am eating WAY too many carbs... my ratios are around (p)25%, (f)25% (c)50%.. not good

    Be sure and keep those steam bags on hand so that you can throw a frozen chicken or fish in it and microwave for 4.5 minutes! You can also throw frozen veggies in them. You get them in the section where the sandwich baggies are kept. I love them!

    If you have a microwave, you can always defrost your chicken. Yogurt also has a lot of protein.

    Yesterday I cooked a frozen salmon burger and ate it over a bed of spinach. I pretty much never skip carbs in my meals, but in this particular case I was saving room for beer. :drinker:

    Grilled (or baked) boneless, skinless chicken!

    Tuna with light mayo or low-fat fat-free Miracle Whip

    Lean, low-calorie fish like Tilapia broiled or baked

    Serve any of the above with veggies (steamed or roasted)

    You can also serve Tuna with low-fat cotage cheese on a bed of lettuce and tomato slices; maybe even some thinly sliced onion

    actually 50% carbs is good. They reccommend about 45-65% carbs for proper nutrition. Carbs are brain food and energy :]

    altho I am guilty of watching carbs myself. I am at about 40% now. I just put my carb meals where I know they will be all used up. The best times are in the morning right after you wake, 40 minutes before my workout and 30 minutes after my workout. Keeps glycogen levels up and prevents muscle breakdown!

    Thank you! You just reminded me I have tuna salad in the fridge I made yesterday morning! Perfect

    Thank you to everyone else as well- Some good ideas for when I have defrosted meat (I try to stay away from defrosting in microwave because I always defrost too long and burn the food.
