Lemon Butter Chicken

4 - 6 skinless boneless chicken breasts
1/2 c. (125 mL) butter, melted (I decreased to 3 tbsp/45 mL)
1/3 c. (75 mL) water
3 Tbsp. (45 mL) soy sauce (dark)
1 1/2 Tbsp. (22.5 mL) lemon juice
1/4 to 1 tsp. (1 to 5 mL) crushed red pepper flakes (the more you add, the spicier it will be)

Place chicken in deep baking dish. Mix remaining ingredients together & pour over chicken. Bake @ 400F, covered, for 15 min. Turn chicken pieces & bake, uncovered, another 10 - 15 min, or until chicken is cooked.

This recipe can also be done with whole chicken pieces. Increase baking time accordingly (approx 1 hr).

Serve with rice & veggies. The sauce is amazing drizzled over the rice!
