Recipe - Poached Eggs in Salsa

Found this yesterday on Cozi.com. I'll be making it tonight:

Prep time: 10 min
Servings: 4

Ingredients
6 corn tortillas
1 jar (12 oz) salsa (choose your favorite variety)
6 eggs
shredded cheese of your choice

Preparation

1. Warm tortillas in the oven or microwave and wrap in towels to keep warm.
2. Heat salsa in a shallow pan until small bubbles form.
3. Crack in eggs.
4. Cover pan and let the eggs poach in the sauce until done.
5. Uncover and sprinkle with cheese during the last minute or two.
6. Serve on warmed corn tortillas with guacamole, sour cream and salad, if desired.

    YUM! Thanks for the recipe, I would have never thought to poach the eggs IN the salsa!

    And I have all those ingredients! And how cool that it'll be so easy to just make one or two eggs when I want! Yay! (I think I'm using up all the exclamation points on my computer.)

    I have all the ingredients on hand EXCEPT the tortillas, but I think it will be delish without them (and save some calories).

    Update: I made this last night for dinner and LOVED it. I can't wait to make it again tonight. It was so easy that it practically made itself. So 'hands off' that I was able to pack my lunch for today and tidy the kitchen while it cooked.

    I served it up in a bowl with no tortillas. Didn't miss them at all.
