use ground chicken instead of ground beef. that's what i do and it tastes awesome!

Switch it up and make white chicken chili!!!! I soak white beans (you can buy them in the can, but there is tons of sodium in them) and then throw them in the crockpot, add some diced chiles, boneless skinless chicken breast cooked and shredded or diced, and one packet of McCormick's white chicken chili seasoning. I have brought this to many potlucks and people love it. I always bring tortilla chips, shredded cheese, and sour cream for those who wish it to be less healthy! When I make it for myself I will add 1/8 cup 2% shredded cheese and a dallop of greek yogurt in place of sour cream. It is one of my favorites!0

I got adventurous, and I made the following chili for a cook-off at work - it's unusual, but it went over really well. Super fast and really easy! I don't love really spicy things, so I only used 1 pepper instead of 3. I put 10 servings at 325 calories each, but my 7 quart crock pot was full - I would say it really serves about 16 medium bowls at 203 calories. If you have an questions, feel free to message me!
Turkey Sweet Potato Chili
Ingredients
*Amount of spice is estimated
*Coarse ground salt and fresh ground pepper
*2 tbsp chili powder
*4 tsp cumin
*2 tsp cinnamon
*2 tsp oregano
*1 tsp red pepper flakes
1 lb lean ground turkey
1 large onion, chopped
1 sweet potato, diced
3 cloves of garlic, minced
2 medium sized bell peppers, diced
3 mild chili peppers, diced (I only used 1 Poblano)
6 cups black beans (about two cans)
2 cups frozen corn kernels
28 oz can crushed tomatoes
14 oz can diced tomatoes
15 oz can pumpkin puree, or 2 cups homemade
Directions
1. Mix the chili powder through red pepper flakes together in a small container. To a large bowl add the onion through pumpkin puree. Mix well. (Both can be prepped the night before, covered and placed in the refrigerator)
2. Spray a large skillet with cooking spray and place over medium heat; add the ground turkey and cook until browned, breaking it up with a slotted spoon. Season with salt, pepper, and about 1/3 of the spice mixture. Use slotted spoon to transfer turkey to Crock Pot (so remaining fat stays in the pan); add the vegetable mixture, sprinkle with remaining seasoning and mix well.
3. Cook on low for 6-8 hours.
Serve with your favorite chili toppings - cilantro, green onion, cheese, sour cream, etc.

Black Bean Chili...... Made for my hubby for Valentines and he and I both LOVED this.. Low in calories.. big on taste.. Easy to make!
2 tablespoon butter
1 cup finely chopped onion
1cup chopped celery
1 cup chopped carrots
1 tablespoon minced garlic
2 cans mushroom
1 tablespoon ground cumin
3/4 teaspoon dried basil
1 tablespoon chili powder -- up to 2
3/4 teaspoon dried oregano
1 1/8 teaspoons salt - optional
3/4 teaspoon pepper
28 ounces canned tomatoes -- with juice
2 cans black beans --with juice
1 can green chili's
3/4 teaspoon Tabasco sauce - or Red Hot
3 oz canned tomato paste
1/4 cup red wine
2 cups water
Served with flax seed bread and Earth Balance spread.
It was yummy.
Serves 8.
Heat oil, add onions, celery, green peppers, carrots, garlic, mushrooms,
cumin, basil, chili powder, oregano, salt and pepper and saute for two minutes.
Add tomatoes and juice, beans and liquid, Tabasco, tomato paste, wine and
water and bring to boil, stirring constantly. Reduce heat and simmer for
20 minutes.
I added a pinch of feta cheese and a teaspoon of fat free sour cream for a topping.

Thanks! Think I'll try the Sweet Potatoe Chili. Sounds really different! I'll let you know if I get to take home the "golden chili pig". Serious... its a trophy of a golden pig. A true cherished title at work!0
