I'm going on vacation and would really like to bring a healthy trail mix along for the long car ride and to bring to the beach, anyone have any good recipes? Preferably without nuts except for peanuts are ok. Thanks

Well, if you have a market around you with a large selection of dried bulk nuts/fruits, you can pretty much mix anything you want into a trail mix.

I personally love Cape Cod Cranberry mixes.

Raisins, dates, cranberries, walnuts, apples, and coconut. All dried of course. A tiny handful does you wonders because all of the fruit expands in your belly. Usually I add some dried pinapple to it as well as some dried apricots.

    HG's snack-tastic holiday mix

2 cups puffed corn cereal (like Kix)
1/2 cup Fiber One bran cereal (original)
1 ounce (1 cup) crispy freeze dried apples
    3 tablespoons Splenda
1 1/2 tablespoons light whipped butter or light buttery spray
    1 tablespoon light corn syrup
    1/2 teaspoon cinnamon
1 tablespoon sliced almonds (or in your case, peanuts)

Set out a large piece of foil for the recipe to cool on after it's prepared.

In a medium saucepan, combine butter, Splenda, corn syrup, and cinnaon. Stir while cooking over low heat. Once mix is thouroughly blended and bubbling, stir in both cereals and coat them with the mix. Continuously stir for about 2 1/2 minutes, until cereal mix looks well coated and toasty.

Mix in apple crisps & almonds(peanuts), and then immediately remove from heat. Spread mix out on foil until cool.

    makes 4 servings(1 cup each)
