I would like to make chili for dinner, but have never tried making it in a crock pot. Does anybody have any good recipes that I can try?

I don't really have a "recipe" but I'll tell you what I do. I take about 5 cans of beans (combo of red kidney, white beans, chili beans) 1 can of diced tomatoes, packet of chili seasoning. Add cooked ground turkey. sometimes I add a can of non fat refried beans....makes it creamy...yum! cook on low for several hours. So good!!!!

Here's mine - you do have to brown the turkey first but the rest is all the crock pot. You can e,liminate the cheese and sour cream for a lower fat version.

    2 lbs ground turkey
    1/4 cup chili powder
    1 tablespoon cumin
    1 teaspoon cayenne pepper
2 cans (28 oz) of peeled tomatoes, drained
1 can (16 oz) of red kidney beans, drained and rinsed
    1 bell pepper, diced
    1 onion, diced
1 cup fresh cilantro, roughly chopped
    2 dried, smoked jalepeno peppers
    shredded cheddar cheese
    sour Cream

    Directions
1.1. Add the turkey to a large skillet on high heat to brown. As the turkey browns, add chili powder, cumin and cayenne pepper. Transfer browned turkey into a slow cooker set to high.
2.2. Chop up peeled tomatoes into large pieces and add to the slow cooker along with the kidney beans, bell pepper, 3/4 of the onion and cilantro.
3.3. Cut off the stems of the dried peppers and cut lengthwise. If you prefer a spicy chili continue to cut the peppers into small pieces and add to the slow cooker. If you like just a little heat, remove the seeds before cutting up the peppers and adding to the chili.
4.4. Stir occasionally. Once the cilantro has cooked down and the onions are soft, turn the slow cooker to low. Serve with remaining onion, cheese and sour cream as optional toppings.

The best recipe for chili is going to the grocery store and buying whatever ingredients you'd think would be great in a chili. Then mix em all up and see what you get.

I recently made crockpot chili with black beans, chili beans, kidney beans, 95% lean ground beef, a pork tenderloin, canned tomatoes, tomato sauce and paste, onion, red peppers, habaneros, garlic, chili spices, salt and pepper. It was pretty standard but also pretty awesome.

No matter what recipe you chooose - if you are making it in the crock pot - brown your meat before. And add a little bit less liquid because the crock pot creates more liquid and you can end up with watery chili.

Food & Wine Magazine this month had a good one - Turkey & Black Bean Chili.

Also, keep in mind that if you really want the taste of beef - you don't have to sacrifice it if you use extra lean (96/4) ground beef OR you can do 50 % beef and 50% turkey or chicken. That's what I like to do.

I made a really good one not too long ago, it was sort of a "white" chili because I used turkey sausage and great northern beans instead of beef and kidney beans. It is a little prep work to start, but it's good.

1/2 to 1 white onion, chopped
Two 15oz cans Great Northern Beans, drained and rinsed
One 26oz can Hunts whole peeled tomatoes
    2 cups chicken broth
    1.5 cups frozen corn
One small (I think 6oz) can tomato paste
    5 Jennie-O - Smoked Turkey Sausage Links - hot
Spice mix - chili powder, cumin, cayenne, salt, pepper, paprika (I eyeballed these.. sorry!)

Remove the casings from the sausage links and break them up into a hot skillet. Cook them, continuing to break them up, until no longer pink. Place in the bottom crock pot. Do not clean the skillet. Next, add the onion to the same skillet and saute until translucent and they begin to get some color on the edges. Add in spice mixture and cook for a few minutes more to develop flavors. If you want to get every last bit of seasoning out of the skillet, add in some of the chicken broth and with the heat still on, scrape the bottom of the pan with a wooden spoon to lift off the brown bits.

Add onions and remaining ingredients to the crock pot, along with about a cup of water, or more if it seems like there's not much liquid to cook down. Stir to combine and cook on low for 8-10 hours. Everything is cooked so you should be able to do 4-6 hours if that fits better.

This recipe made 6 servings and came in at 296 calories, 41g carbs, 9g fat, & 17g protein
