low carb mini cheesecakes

Low Carb Mini Cheesecakes
3 8oz blocks of cream cheese (I used the 1/3 less fat philly)
1 c splenda (I use about a dropper full of liquid stevia and a Tbsp of white sugar to cut the bitterness and so my family doesn't catch on LOL)
1 Tbsp pure vanilla
2 eggs
Mix it all together and put it into 12 muffin cups, bake at 350 for 20 minutes. These are so great, only about 150 calories and just a couple of carbs. Sometimes I top them with dark chocolate or strawberries, sometimes I use almond meal and butter and cinnamon for a crust... the possibilities are endless

Thanks for the reminder on that recipe. I have a similar recipe that I have made before, and they are pretty good!
You can also save about 1/3 of the batter and mix in about 1 1/2 tsp of unsweetened cocoa. Pour the "vanilla" batter into the tins, and then "swirl" in some of the batter w/cocoa.0 -
