Ideas for Cold Dinners - please?

I don't think I can spend another evening in a hot kitchen when it's 36 C (96.8 F) outside. Yuck!

What are some ideas for cold dinners?

I have been having fresh salads with some apple/pear/grapes in them, but what else can I do?

    Wow... I wish it was 96 here!!!

    I love doing Chicken Salad (my favorite is Curried Chicken Salad - lots of flavor)

    Shrimp Salad with Grilled Zucchini

    Grilled Vegetables - served room temperature

    And last night my dinner was "on- the-go" but it was a Greek Yogurt-Raspberries-Granola Parfait I made at home... very very filling!
  • My favorite restaurant serves lettuce wraps. Boston lettuce, with shredded carrots, Brussels sprouts, peanuts, curried tofu, mint, cilantro and a very yummy salsa type sauce.

    You can also make gazpacho, which is a cold soup made with tomato juice, and cucumbers, bell peppers, onions, celery, carrots run through the food processor. Add spices as needed. (there are many gazpacho recipes online)

    Spring rolls are also amazing. Add cucumber, avocado and carrots with a light vinaigrette or sauce.
  • Salads of course. I make tuna salad with sustainable tuna (Whole Foods), celery, onion, light mayo and dijon mustard. Really nice with a small salad.

    I also make a cold pasta salad with whole wheat pasta, grape tomatoes, cucumber, red onion, black olives (optional), broccoli and some light italian dressing. Refrigerate overnight and enjoy.

    I use leftover rotisserie chicken to make chicken salad.

    And finally, when I have no time to cook, I go to Whole foods and get the salad bar to go!

    How about a nice tzatziki sauce with whole wheat pitas and cold cubed chicken breast chunks?!

    Most of my cold meals start with a 60-calorie Joseph's pita, stuffed with:

    hummus, baby spinach, and fresh tomato

    tuna salad and baby spinach

    cold sliced turkey and fresh vegetables


    Also, I love to cut up cold, grilled chicken breast, combine it with at least two cups of salad greens, any other fresh veggies, and 1-2 tablespoons of Trader Joe's Spicy Peanut Vinaigrette.
