coconut water and coconut meat

I just broke open a coconut to show my kids. Anyone have any recipes -lowfat/lowcal that I can try?

Just eating the meat raw is good0

Shred the coconut and sprinkle on yogurt, oatmeal or frozen yogurt, etc. YUM!
Oops forgot.... you can make healthy coconut shrimp by dipping in egg whites and then in a mix of whole wheat flour, seasonings and shredded coconut and bake!0 -

No low cal or low fat coconut recopies, coconut is very high in fat. 80 grams has 27 grams of fat, the water inside is a different story see the link above.0
