"Emmy Potatoes". Red potatoes with dijon mustard.

My friend Emmy got me HOOKED on these! Kind of like a warm potato salad. Filling and satisfying.

Ingredients:
Petite red potatoes (quartered)
Parsley
Thyme
Fresh garlic
Salt/pepper or Nature's Seasoning
Garlic powder (optional)
Cayenne pepper
Scallions
Dijon mustard

-Preheat oven to 400 degrees

-Grease baking pan (I use a darker colored, round cake pan. The potatoes seem to get crispier with a dark pan)

-Wash and quarter red potatoes

-Season with salt/pepper, thyme, parsley, garlic powder and cayenne pepper. Mix them around to make sure every potato gets some seasoning

-Add to greased baking pan

-Peel and dice garlic and sprinkle over potatoes

-Put in oven for 45 minutes to one hour. Check every 15 to 20 minutes and shake the pan up to mix the potatoes. Cooking time will vary based on how many potatoes you have in the pan. Use two pans if needed. They will cook faster and get more crispy that way. I use three potatoes and it takes 45 minutes or less

-Once crispy, not too crispy, add chopped scallions

-You can either place the pan back into the oven to get the scallions warm and fragrant or not

-Add dijon mustard (to taste) and stir up. I like to coat them nicely :) Can be spicy, so add a little at first.
Enjoy :)

Great as a side dish. Add more cayenne pepper or mustard if you like it spicy!

    Sounds great! I had red potatoes with cottage cheese (the protein packed replacement of sour cream) and jalapeño cheddar cheese for lunch...this will replace that next week!
