Apricot Chicken

It's not chinese food, but it is pretty darn close! I made a few healthful changes to a family favorite.

Generic - Boneless, Skinless Chicken Breast, 16 oz 440 0 2 88 0 440
Polaner - Sugar Free With Fiber - Apricot Preserves, 8oz 165 66 0 0 50 0
Minute Rice - Instant Whole Grain Brown Rice, 3Cups 900 204 9 18 12 60
Heinz Ketchup - Heinz Ketchup, 8 tbsp 120 32 0 0 0 1,520
Onions - Raw, 1 cup, chopped 67 16 0 1 2 5
Breakstone's - Sour Cream - Free Fat Free, 8 tbsp 120 20 0 4 0 100
Lea & Perrins - Worcestershire Sauce, 1TBS 20 4 0 0 0 260


Total: 1832 342 11 111 64 2385
Per Serving: 305 57 2 19 11 398

Instructions:
Preheat oven to 350.
Cut uncooked chicken into bite size pieces.
Mix all ingredients in a large bowl. (excluding rice)
Pour over chicken in a 9X9 pan.
Bake about 40 minutes.
Prepare rice as directed. Serve over rice. ENJOY!

  • I just wanted to add...
    The original recipe called for
    1lb b/s chicken, 8oz apricot preserves, 8oz creamy russian dressing, 1 packet onion soup mix.
