Ingredients
2 Pilsbury - Carrot Quick Bread (Mix Only
Island Sun - Canned Pumpkin, 1 container (3 1/2 cup (120g) ea.)(30oz total)
Bobs Red Mill - Whole Ground Flax Seed Meal, 4 tbsps
Water - 12 tbsp

Preheat oven to 375F
In a small bowl combine flax seed meal and water, let sit for 2 minutes.
In a large mixing bowl mix together 2 packages of carrot quick bread mix, Flax seed meal and water mixture and the canned pumpkin.
Line mini muffin tins with mini muffin papers. Using a small cookie scoop (2Tbsp) fill each muffin cup with mixture. Once filled, bake in the oven for 20-22 minutes or until an inserted toothpick comes out clean. This recipe makes 68 muffins. (I'm having a party tomorrow so I made a large batch) It's easily halved for convenience.
