PB2 Thai Peanut Sauce
Another love story of PB2. Just bought my first jar yesterday in Mesa Arizona at some obscure fitness/nutrition store. My first recipe is below- substituting PB2 in my regular Thai Peanut Sauce recipe. The recipe below is 1/2 recipe - for a first try Made just over 1/2 cup - enough for 2 with leftovers.
PB2 Thai Peanut Sauce
1/3 cup prepared peanut butter (PB2)
1/2 cup water
1 TBS Splenda brown sugar
1 package splenda
1/2 TBS lemon juice
1/2 TBS soy sauce
1 clove garlic (I used stuff in tube)
1/4 tsp red pepper flakes
1 TBS corn starch
Reconstitute PB2 per instructions- then add all the rest of the ingredients. Because PB2 does not thicken when watered down like real Peanut Butter I added about a TBS of corn starch and heated in the microwave in a Pyrex mixing cup. However I found that after a few minutes the thickening did not stand up. I was using as a salad dressing so it was fine. This may require additional experimentation.
Serving suggestion - Peanut sauce is great over grilled chicken on a bed of fresh spinach - called Swimming Rama in your favorite Thai restaurant.
