Marinated chicken breast in island mango sauce and pineapple juice today....dumped in crockpot after a few hours and cooked on low for a few hours. Sliced onion, mushroom, zuchinni and squash and sauteed in a bit of pam....took a ladel full of the juice in crockpot and put over my vegtables and it thickened to just the right consistency and turned kind of dark, guess from where my mushrooms had cooked a little fast and had gotten a bit brown....but i cooked spinich pasta nests and put the chicken on top with the vegables and sauce on top......HELLO....Applebees aint got nothin on this... :)

    It was.....alot better than i expected. It was the act of using the sauce in my vegtables that allowed it to thicken slightly and it brought out more flavor i think. Usually when i cook chicken, marinaded or not...it taste like a piece of nothing...haha...
