enchiladas

so my friend made these the other night.. they are SUPERRRRR yummy and they filly ou up... VERYYY fast :)

this feeds 4 people :)


what you need:
1/2 veggie oil
2 packets of chilie powder mix ( any brand )
1/2 cup of flour
and any meat of your choice ( if you want any at all ) ( if its chicken use 5-7 chicken breasts )
shredded lettuce
diced tomatoes
corn tortillas
chopped green onions
shredded cheese ( any kind )
and whatever spices you wanna add :)

directions:
1) put the chili powder mix into a pot and add the right amount of water for the mix.
turn it on medium/high heat and stir.
once it is mixed well add 1/2 cup of flour to the chili mix and continue to stir until the flour is completely mixed into the chili mix.
turn the heat down to medium heat and let simmer.

2) boil and then shred chicken until its to your likings.

3) dice and cut up all of the veggies

4) pour like a cup of the chili sauce into a bowl and mix it with the shredded chicken ( or whatever meat you want )

5) then in a medium pan pour 1/2 cup of veggie oil in and turn it to med/hot heat and let it get hot.
take a your tortillas and fry them on both sides

6) then dip into chili sauce ( both sides ) then put it on a plate
layer the chicken on top , then the veggies and cheese.

then make another layer by repeating # 6 and then put another tortilla on top of that ( covered in the chii sauce)
and put cheese on top of that ( if you want)

and waaaah laaaah
your done.
it takes about 30 -60 mins to cook
its easy, fun , and tastes DELISH!!!

1 two layered enchilada is 400 cals :)
