Chicken and Cauliflower Curry - Crockpot

We made this for dinner tonight and it was pretty yummy and healthy. The original recipe came out of Ladies Home Journal.
1.5 lbs boneless, skinless chicken breast - cut into 3 inch pieces
1 small onion, thinly sliced
5 oz carrots, sliced thick
4 tsp curry powder
2 Tbsp cornstarch
1/2 tsp salt
3/4 tsp turmeric
1/2 head cauliflower cut into large florets
3 cloves garlic, minced
1/3 cup raisins
1 1/4 cup greek yogurt (I used full fat)
1/4 cup chopped cilantro
1. Place chicken, carrots and onions in crock-pot. Combine curry powder, cornstarch, salt and turmeric together; toss with chicken mixture.
2. Add cauliflower, garlic, raisins and 1/3 cup water. Cover and cook on high 4 hours.
3. Ladle 1 cup of cooking liquid into a bowl (if you have that much). Combine with yogurt and cilantro. Pour back into crockpot, gently stir, and serve.
It made six 1-cup servings, at 253 calories each.
I served it over brown rice.
If I make it again, I will probably use some dark meat along with the white, as the breast meat was just starting to get dry. The seasoning was tasty but mild, so I may spice it up a bit more next time, too.
