Lentil Chili
Since it's "Meatless Monday" I thought I'd post my favorite, filling vegetarian chili!!
Lentil Chili
4 servings
Ingredients
3/4 cups uncooked green lentils
2 cups vegetable broth
1 (16 ounce) can crushed tomatoes
2-3 garlic cloves, crushed
1 medium onion, chopped
1 medium green bell pepper, chopped
2 Tbsp chili powder
1/4 tsp allspice
1/2 tsp cumin
2 cups whole kernel corn
1 (16 ounce) can tomato sauce
Directions
Combine all the ingredients (except the corn and tomato sauce) in a 2-1/2 quart pot and boil over high heat.
Reduce the heat to low, cover and simmer for about 20-25 minutes. Stir in the tomato sauce and corn. Simmer for approx. 10 more minutes. Serve hot.
