Looking for high protein/low fat/lower calorie snacks - any

Options
This is my 2nd day tracking food here on MFP. I'm realizing I am not getting enough protein - only getting about 1/3 of what I need for the day.
Anyone have any ideas for snacks that would help me boost my protein intake? BTW: i'm vegetarian!
today i did peanut butter and an apple. but that's gonna get boring real fast!

Do you eat dairy? Nonfat plain Greek yogurt. Add some sliced almonds. Yum, and lots of protein

I have the same problem!! And peanut butter and nuts add up for fat-FAST!!! But I do like to snack on almonds. Lately I've been having a small portion of oatmeal w/ soymilk (or whatever non-dairy is your fave), I find its a great pre-workout snack too, the carbs give you good energy!

Although, I love peanut butter with and apple!! I could prob be super happy with that!

Have you read the book Skinny *****? With your vegan lifestyle it has lots of choices in the book and information on your protein intake. Legumes and nuts are gonna be a must for you.

Celery, Reduced Fat Peanut Butter, and Raisins....aka "Ants On a Log"
This is one of my favorite snacks. You get protein, veggie, and fruit. Could be a nice alternative from apples and peanut butter :)

These are a couple of my favorite things, right now:

    Chickpea cutlets: http://www.theppk.com/2010/11/doublebatch-chickpea-cutlets/
Spinach linguine with edamame pesto: http://www.theppk.com/2009/10/edamame-pesto-a-totally-satisfying-low-fat-manifesto/

I've calculated the nutritional info for both of these, which I could send if you like. Just let me know. :-) If you look at my food diary for today, you'll see how much protein and calories a serving of each is.

This sesame garlic tempeh is great on a salad or in a stir fry: http://www.tofurky.com/tempehproducts/marinated_strips.html

I would just get the book first and see if it might be something you're interested in.
