Need small dinner ideas.

It's just me and the kids for dinner and they don't eat much. I'm trying to push past this nightmarish platau I've been on for 2 months so I'm trying to use some of my dinner calories earlier in the day instead, so I don't want a big meal either. I'm not much of a cook, so I'm looking for some simple ideas for small healthy meals I can plan for me and the kids. Leftovers are okay - I can take them to work or use it the next night, but must be easy, simple and kid-friendly. I'm very interested in menu planning which would hopefully simplify my life, not complicate it. But I have no ideas on what to put on it - well, I do, but the same thing every other day gets boring for all of us!

    Egg white omlete, good way to use up left over veggies

    I'm planning a chicken and veggie stirfry for tonight. The veggies were prepackaged, $1 from Publix on sale this week, and the chicken is just some frozen chicken tenders. If the kids want rice you can serve some to them and skip it for yourself if it's too much.

    We like to do Brinner (or breakfast for dinner). We have whole wheat waffles with sugar free syrup. Or I take the left over fruits and we make a fruit salad. For pasta we take the No Yoke noodles with some butter and parm cheese with peas added in. I love that as well. If you want to do something more in depth I like to cook you chicken with balsamic vinger some steamed mixed veggies and small amount of whole grain rice or mashed potatos. All good meals and easy to make. If you need help message me.

    How many calories is small for dinner for you? Your small and mine might be really different.

    300-400 calories??? Maybe 500 for the days when I have a higher burn? I hadn't thought that far into it LOL!

    I just bought a small 6-cup rice cooker and find it wonderful for meals. I can cook some brown rice in the morning and it can be used for various snacks/meals throughout the day. I like to add some pinto beans (homemade to eliminate the high sodium) and salsa together with the rice. I prefer foods I can measure out so I know exact quantities. Omlettes are a great choice too, low calorie and filling.

    I admit my cop out answer for small meals is Lean Cusine. They're pretty filling and usually 220-360 callers so I can eat something else if I need (fruit or string cheese) if I have too.
